When Life Gives You Paperwork, Eat Kabsa First

Riyadh isnโ€™t just the capital of Saudi Arabia, itโ€™s also a place where modern life and traditional flavors meet. On this particular visit, I was in the city for a very practical reason: to process my police check. But before diving into paperwork and queues, my mom had a better idea: “To eat first”

And so, we made our way to Azal Restaurant, a well-loved spot known for its warm plates and even warmer spices.

The Comfort of Kabsa

We ordered their signature chicken kabsa, a traditional Arabian rice dish infused with cloves, cinnamon, cardamom, and black lime, cooked with tender chicken and often served with a tomato-based sauce or yogurt on the side.

The rice was fluffy and full of flavor, the spices werenโ€™t overpowering but rather comforting, and the chicken was so tender it easily came apart with a spoon. It’s easy to see why kabsa is to Arabs what fried rice is to many Asians, familiar, filling, and deeply rooted in cultural identity.

Every bite was grounding. Before the dayโ€™s busy tasks, we had this shared moment of quiet joy and delicious tradition.
